Akashi Whisky is the only whisky in the world that is produced under the supervision of a grand master of sake making, a Toji. Thus, many sake making methods are implemented in the production of the whisky. Amongst other things, smaller pot stills are used than in the typical Scottish and Japanese distilleries. This blended whisky matures for two years in Japanese shochu casks made of American oak, then in bourbon casks. The finish is in sherry casks for one year.Tasting notes:Colour: gold. Nose: Fruity, sweetish, vanilla, peanuts, lemongrass, hints of spicy rye. Flavour: Fresh, spicy, oak, walnut, hints of peat, black pepper.
