The Schneider family's winery in Ellenstadt was founded in 1994 with just one hectare of land, and today around 92 hectares of vines are cultivated. The winemaker Markus Bauer attaches great importance to organic cultivation without artificial fertilizers and insecticides. He uses only organic fertilizers for his vines. A wide variety of grape varieties are grown on this estate, including Riesling, Pinot Gris, Merlot, Cabernet and many more. The average annual production is 800,000 bottles, which are now offered worldwide by various top restaurants, hotels and cruise ships. Tasting notes:In the glass dark purple with black core. Very intense aroma of elderberry syrup, cherries, roasted hazelnuts, juniper, cassis jams. On the palate of dark berries, fine spicy with elegant tannins, dark chocolate and mocha. Long lasting on the finish. Grape varieties: Merlot, Cabernet Dorsa, Cabernet Sauvignon, Blaufränkisch, Syrah. Aging: 14 weeks in wooden fermentation vats, followed by aging in wooden barrels until October. Soil: Different terroirs of the Palatinate. Storage potential: until 2028. Acidity: 5.6 g/l. Residual sugar: 5,4 g/l. Serving temperature: 15-18°C. Closure: Natural cork. This wine is an excellent food companion and goes very well with beef and red smear cheese.
