The CO2 produced during fermentation is collected by the distillery in pressurized tanks and further processed for the production of carbonated beverages. The residues from distillation are used as a natural fertilizer on sugar cane fields. Ron Sostenible is a Dominican rum which matures in ex-bourbon barrels after distillation in column still.
