This creation of the barrique brandies, distilled from the best cherries, is stored in oak barrels after distillation and matures there for 12 to 18 months. After completion of the maturation, the distillate is refined with a homemade bonifi cateur. This dosage gives the fruit brandy its fine sweetness and smoothness.
