Don Julio González has learned his skills and experience of manufacturing from his family. He founded his own distillery at the age of 17. The Don Julio Añejo is aged in small white oak barrels for at least one year. This sounds rather short, but the Mexican climate accelerates the maturing process considerably. Añejo means that the tequila has reached the highest degree of maturity. According to law, tequila may only be distilled in certain regions of Mexico from the fermented juice of a single variety of agave - the "Agave Tequiliana Weber".
